You talk a lot about all the fancy equipment for IP audio but what about the fundamental issue of latency. How can any device these companies are selling assure the uninterrupted stream of data necessary for audio without dropuouts? I can see it work on local LANs and such but not over any public network that cannot guarantee a certain quality-of-service.

I believe these are typically used in applications where latency is not an issue, i.e. where broadcast delivery is not synced to video or other sources outside the stream, where no reference to real-time vs. latency is perceived.
